Yam baskets served

Time to celebrate, daughters travelled half the world home to celebrate my big bday๐Ÿ˜๐Ÿ˜, I shall cook one of their favorite, nutritional n yummy dish that I typically do only during Chinese New Year. It’s special this time, rest of family members are home too so it’s also a reunion celebration! Soon, we will be in 3 separate continents so let’s par~ty!

Prepare ingredients ~ 2 frozen yam rings sitting on top on each other, red n yellow capsicums n defrosted boneless chicken thighs (not in below photo).

Prepare pot of oil to deep fry the yam rings n beehoon.

Also be ready with sheet of tin foil to lower the yam rings into oil n to aid in lifting up yam rings upon cooking.

After yam rings been fried, next deep fry beehoon. I love how the beehoon sizzle n expand during deep frying.

Start to plate up, first the yam rings, at this stage, I try to absorb any visible oil on the plate with paper towels.

Then topped fried beehoon over the yam rings.

In a wok, fry first the marinated chicken thighs till cooked. Then add in the capsicum n fry till cooked. I would also add in some crispy cashew nuts into mix. This time round, I didn’t have any cashew nuts handy so had to give it a miss.

Drain the veg mix of any gravy before topping the yam rings in order to retain the crispness.

There you go 2 dishes ย of yam baskets served. Enjoy!!๐ŸŽ‚๐ŸŽ‚

I’ve just noticed the yam ring which is the main feature of this post is totally submerged by all other ingredients. Nevertheless, it’s a dish worth reblogging especially good during festive seasons such as Chinese new year!๐Ÿ˜๐Ÿ˜
