Chicken curry

It’s been a while since we’ve had spicy,  thick chicken curry.  One pot goodness, it’s easy to cook and delicious paired with steamed rice.

Ingredients

Chicken (1kg), curry spices,  curry leaves, potatoes, coconut milk, tomatoes and onion.

Preparation

Cut chicken into reasonable sized pieces. Wash curry leaves.  Cut up potatoes, onion, tomatoes.

Method

1)In a wok,  heat up some oil.  Fry the chicken pieces marinated with curry spices.

2) Fry with curry leaves till fragrant.  If too dry,  add some water so that chicken pieces do not burn . Cover the wok and braise chicken till almost cooked.

3) Add in the onions,  more water if needed. Cover the wok and let the curry chicken cook.

4)Add in potatoes and some water as necessary. Keep it thick with just enough water to keep from burning. Cover the wok to cook the potatoes.

5) Once potatoes are softened,  add in coconut milk.

6)Finally, add in the tomatoes. Taste,  add some salt and sugar if needed.

7)Once the curry mixture boils,  it’s ready to serve.

8)Serve with steamed rice.  Enjoy…
